CANINO RIDGEA Taste of Canino in California

Canino Ridge in Lake County, owned by Chris and Carolyn Ruttan, is home to a 120 year old grove of California Canino and Bouteillan olive trees from which we produce our unfiltered, cold-pressed extra virgin olive oil. When we purchased our property, we had no idea what varietal these old trees were. We sent olive pits for identification to the World Germplasm Repository at the University of Cordoba in Spain. Based on the pit characteristics, Dr. Diego Barranco identified them as Canino and Bouteillan olives. We were thrilled to learn we had such an unusual grove of old-world olive trees in California.For a while we were satisfied with this identification and named our ranch Canino Ridge. However we became aware of a morphological fly-in-the-ointment. The leaf and olive of the Canino were a similar size and shape to a more common old variety of olive tree in California, known as Redding Picholine. Redding Picholine is not true Picholine. In the late 1870s, a nursery man named Mr.Redding exported the variety from France and sold it all over northern California as Picholine. Five years later his customers were dismayed to learn that they weren't true Picholine, but by that time Mr. Redding had died. The prevalent theory is that the Picholine grafts died in transport to California and the unknown rootstock survived. We now know this unknown rootstock is the Italian varietal Canino. |

Century Old Canino Olive Trees |
How did this unusual combination of Italian Canino and French Bouteillan come to be in our olive grove? Bouteillan is frequently used as a pollinator for Picholine. Because of Mr. Redding's fraudulent sale of Canino as Picholine, undoubtedly our unsuspecting olive entrepreneur would have mistakenly picked Bouteillan as the pollinator of choice. Since none of this is documented we have taken a certain license to our speculation, which keeps things interesting on the farm.Canino Olives (also known as Canina, Caninese, Montignos) originated in the hills in the north of Lazio, Italy. Canino is a district of Italy renowned for its olive growing. Cultivated in the Latium region, its medium yield of olives yield high quality olive oil. Sterile, it is resistant against parasites. The Canino tree produces a small olive that is spherical in shape and produces a rich oil, characterized by robust flavor, and a peppery aftertaste, perfect with seafood and in salad dressings. |

Amfissa. A Greek variety that is versatile, cold-hardy, and used for green or black table olives or oil. Strong vigor, grows quickly, & comes into production in 3-4 years. Spreading habit and canopy, over 70% of Greece's table growing acreage is this variety. The olive is very large and oblong in shape. The tree is self-polinating, though pollenator will help yields.Ascolana. A cold-hardy, Italian variety tree of great vigor with dense foliage and a tendency for upward growth. The fruit is very large (8 to 10g), ellipsoidal, and slightly asymmetrical. Ascolana is most often used as a table olive, the fruit is a milky, white color, sought after for its excellent flavor, but easily bruised during harvesting. Oil production is moderate, 16 to 18 % by weight, and excellent quality in the light oil category.Barouni. A North African variety, the Barouni tree is medium in size - 15 to 25 feet tall - with a moderately spreading top. The Barouni olive ripens in October and November as an extra-large, oval-shaped, fruit. The Barouni olive is very cold and heat hardy and consistently bears a large crop of fruit each year. Barouni olives are often sold fresh for curing as table olives. The tree's shorter size makes it ideal for hand-picking.![]() Bouteillan. A tree of strong vigor and erect dense growth. The fruit is large ovoid and slightly asymmetric in shape. Oil content is high. The fruit is clingstone when green but becomes freestone when picked later. Bouteillan grows rapidly, requires frequent pruning and irrigation. Productivity is high and constant. Ripens mid-November. It is self-pollinating, and an intermediate ripener. Bouteillan is frequently used as a pollinator for Picholine.California Canino Also known as Redding Picholine (not true Picholine), it shares more morphological characteristics in common with Italian Canino. A tall upright tree with a compact crown. It has small fruit (1-2 grams), spherical in shape. At harvest, the olives are never all black because the maturation is late (December) but spread out. The yield in oil is moderate (15-16%) but the quality of the product is very good. It is self sterile with a low ovarian abortion rate.FrantoioMost noted olive variety in Tuscany, Italy. The tree is fast growing, adaptable to a wide variety of soils, and produces a consistently reliable crop of olives. The olive is of medium size (2 to 3 grams), and rich in oil (18 to 22%), which is robust, complex, and excellent quality. The olives have a pleasant, nutty flavor when pickled. Frantoio is self-polinating but will produce more abundant fruit when pollinated by another tree variety. Pendolino and Leccino are excellent pollinators for Frantoio.Itrana. An upright olive tree grown in the Lazio (Latium) area of Italy. It produces large, round olives that are used for making both table olives and oil. Olive oil yield is 20 to 22%. The tree is self-sterile and needs another olive tree to pollinate it. Winter hardy. |
Leccino.A vigorous Italian tree with an open, semi-pendulous growth. The fruit is medium size (2 to 3 grams) elipsoidal, and slightly asymmetrical in shape. It has variable oil content between 16 and 21%. The oil is good, mildly fruity, and delicate. Leccino is self-sterile. Pendolino, Maurino, Frantoio, or Maurino are effective pollinators. It has good resistance to wind, fog, olive knot, fungus, and peacock spot.Lechin De Sevilla. A vigorous, rustic Spanish varietal with a thick, dense crown closely and based on its genetic profile closely related to Nevadillo. Its name (from the Spanish root "leche" meaning milk) is due to the off-white color of the flesh. It tolerates cold weather, droughts and limy or bad quality soils. it is a balanced smooth-pouring oil, average production, with grassy aroma of olives. The flavor is bitter with an average peak intensity and leaves a green almond aftertaste in the mouth. It is used primarily as a blending oil to compliment other olive oils varietals,such as Hojiblanca and Picual.Manzanilla. A vigorous Spanish tree with an upright growing habit and moderately tollerant of cold weather. It is the most common table olive grown in California. The fruit is medium large (3 to 5 grams), spherical with a slight asymmetry and are typically picked green in September and October. Sevillano is an excellent pollinator for Manzanilla. These olives are appreciated on international markets for the recognizable shape of the fruit, ease of removing the pit and for excellent quality of flesh.Pendolino. A slow growing Italian cultivar of moderate vigor and a pendulous, weeping habit. Its fruit is ellipsoidal, asymmetrical and weighs between 1.2 and 2 grams. Fruit maturation is intermediate in relation to other tuscan oil varietals. Pendolino is self-sterile and prefers Maurino and Leccino as pollinators. It has mild resistance to cold. Pendolino is widely appreciated by growers for its high fruit production and role as an excellent pollinator, both for table olive and oil varietals.Picholine. A dual purpose olive (oil & table) from the south of France with good cold resistance. The fruit is medium size and has a distinctive shape: asymmetric and elongated with a pointed apex. It yields an average of 18-20% in oil. Picholine is an early producer and adapts easily to varied climates and soils.Sevillano. Spanish olive tree of vigorous growth and regular fruit bearer. It is renowned for very large olives commonly sold by the name queen olives. The fruit ripens early, is cling stone, low oil content, and primarily used for pickling. It is moderately cold-hardy and likes well drained soil.
